Co-extrusion for Vegetarian Food Products
Co-extruded vegetarian bacon
Vegetarian food producers had told us that vegetarians really miss not having bacon. Our challenge was to come up with a co-extrusion design that would make vegetarian bacon (made from a mushroom based derivative) look and taste like the real thing.
To make matters even more interesting, the product dimensions were tiny, with size limits of only 27mm high by 150mm wide (1.1 x 6 inches).
The result speaks for itself.
The vegetarian base for prepared foods is by its nature a bland material, which requires blending with flavours, spices and other vegetarian ingredients to deliver an acceptable consumer product.
